Ingredients
– 1 9-inch pie crust, pre-baked
– 12 ounces semisweet chocolate, chopped
– 1 cup heavy cream
– 3 large eggs
– 3/4 cup granulated sugar
– 1 teaspoon vanilla extract
– 1/4 teaspoon salt
Instructions
1. Preheat the oven to 325°F.
2. In a medium saucepan, heat the heavy cream over medium heat, stirring occasionally, until steaming and just beginning to simmer.
3. Remove the saucepan from the heat and add the chopped chocolate. Let the chocolate sit for 2-3 minutes, then whisk until smooth and completely melted.
4. In a separate bowl, whisk together the eggs, sugar, vanilla, and salt until well combined.
5. Slowly pour the egg mixture into the chocolate mixture, whisking constantly to prevent the eggs from scrambling.
6. Pour the chocolate filling into the pre-baked pie crust.
7. Bake for 30-35 minutes, or until the center is almost set. The pie should still have a slight jiggle in the center.
8. Allow the pie to cool completely, then refrigerate for at least 4 hours or overnight before serving.
