Ingredients

– 3 large eggs

– 3/4 cup granulated sugar

– 1/4 cup all-purpose flour

– 1/4 cup unsweetened cocoa powder

– 1/2 teaspoon baking powder

– 1/4 teaspoon salt

– 8 ounces cream cheese, softened

– 1/4 cup unsalted butter, softened

– 1 cup powdered sugar

– 1 teaspoon vanilla extract


Instructions

1. – Preheat oven to 375°F. Line a 15×10-inch jelly roll pan with parchment paper.

2. – In a large bowl, beat the eggs and granulated sugar until light and fluffy, about 5 minutes.

3. – In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.

4. – Gently fold the dry ingredients into the egg mixture until just combined.

5. – Spread the batter evenly into the prepared pan.

6. – Bake for 12-15 minutes, or until the cake springs back when lightly touched.

7. – While the cake is baking, dust a clean kitchen towel with powdered sugar.

8. – Once the cake is done, immediately invert it onto the prepared towel. Carefully peel off the parchment paper.

9. – Starting from the short end, tightly roll up the cake in the towel. Allow to cool completely, about 1 hour.

10. – In a medium bowl, beat the cream cheese and butter until smooth. Add the powdered sugar and vanilla, and beat until well combined.

11. – Unroll the cooled cake and spread the cream cheese filling evenly over the surface.

12. – Carefully re-roll the cake, removing the towel as you go.

13. – Refrigerate the cake roll for at least 2 hours before slicing and serving.

Notes

For best results, make sure all ingredients are at room temperature before starting. The cake can be made a day in advance and stored in the refrigerator until ready to serve.
