Ingredients
– 2 cups all-purpose flour
– 1 teaspoon baking powder
– 1/2 teaspoon salt
– 1 cup unsalted butter, softened
– 1 cup granulated sugar
– 1 large egg
– 2 teaspoons vanilla extract
– 24 ounces cream cheese, softened
– 1 cup powdered sugar
– 1/2 cup heavy cream
– 1/4 cup crushed peppermint candies (optional)
Instructions
1. Preheat oven to 375°F. Line a 9×13-inch baking pan with parchment paper.
2. In a medium bowl, whisk together the flour, baking powder, and salt.
3. In a large bowl, beat the butter and granulated sugar until light and fluffy, about 2-3 minutes. Beat in the egg and vanilla until combined.
4. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
5. Press the cookie dough into the prepared pan in an even layer.
6. Bake for 18-20 minutes, or until lightly golden. Allow to cool completely.
7. In a large bowl, beat the cream cheese and powdered sugar until smooth and creamy.
8. Fold in the heavy cream and beat until the mixture is light and fluffy.
9. Spread the cream cheese filling evenly over the cooled cookie base.
10. Sprinkle the crushed peppermint candies over the top, if using.
11. Refrigerate for at least 2 hours before serving.
