Ingredients
– 30-40 saltine crackers
– 1 cup (2 sticks) unsalted butter
– 1 cup light brown sugar
– 1 teaspoon vanilla extract
Instructions
1. – Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
2. – Arrange the saltine crackers in a single layer on the prepared baking sheet.
3. – In a medium saucepan, melt the butter over medium heat. Add the brown sugar and stir constantly until the mixture comes to a boil.
4. – Continue to cook, stirring constantly, for 3-5 minutes until the mixture thickens slightly.
5. – Remove from heat and stir in the vanilla extract.
6. – Carefully pour the hot toffee mixture over the crackers, using a spatula to spread it evenly to the edges.
7. – Bake for 5-7 minutes, until the toffee is bubbly and golden.
8. – Remove from oven and let cool completely. Once cooled, break the toffee into bite-sized pieces.
Notes
