Ingredients

– 12 sheets filo dough, thawed if frozen

– 4 oz brie cheese, cut into small cubes

– 1/2 cup fresh or frozen cranberries, chopped

– 4 tbsp unsalted butter, melted

– 1 tsp dried thyme

– 1/4 tsp salt

Instructions

1. 1. Preheat oven to 375°F. Grease a 12-cup muffin tin.

2. 2. Unroll the filo dough and cover with a damp paper towel to prevent it from drying out.

3. 3. Working with one sheet at a time, brush lightly with melted butter. Layer 4 buttered sheets in the muffin cups, pressing gently into the sides and bottom to form a cup.

4. 4. Place a cube of brie in the center of each filo cup. Top with a teaspoon of chopped cranberries.

5. 5. Bake for 12-15 minutes, until the filo is golden brown. Allow to cool for 5 minutes before removing from the tin.

6. 6. Garnish with a sprinkle of dried thyme and serve warm.

Notes

For a variation, try using different types of cheese like goat cheese or cheddar. You can also experiment with different fruit fillings like apple or pear.
