Ingredients
– 1 cup (150g) mixed dried fruits (such as raisins, cranberries, apricots, and cherries)
– 1/2 cup (120ml) brandy
– 1 cup (230g) unsalted butter, softened
– 1 cup (200g) granulated sugar
– 4 large eggs
– 2 cups (250g) all-purpose flour
– 1 teaspoon baking powder
– 1 teaspoon ground cinnamon
– 1/2 teaspoon ground nutmeg
– 1/4 teaspoon ground cloves
– 1/2 cup (70g) chopped walnuts or pecans
Instructions
1. 1. Preheat your oven to 325°F (165°C). Grease and line a 9-inch (23cm) round baking pan with parchment paper.
2. 2. In a medium bowl, combine the mixed dried fruits and brandy. Cover and let soak for at least 2 hours, or up to 24 hours, stirring occasionally.
3. 3. In a large bowl, cream the butter and sugar together until light and fluffy, about 3-5 minutes. Beat in the eggs one at a time, scraping down the sides as needed.
4. 4. In a separate bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and cloves.
5. 5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Fold in the soaked dried fruits and their liquid, as well as the chopped nuts.
6. 6. Pour the batter into the prepared baking pan and smooth the top.
7. 7. Bake for 60-75 minutes, or until a toothpick inserted in the center comes out clean. Cover the top with foil if it starts to brown too quickly.
8. 8. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing and serving.
Notes
For a deeper flavor, you can soak the dried fruits in the brandy for up to 24 hours. The cake can be stored in an airtight container at room temperature for up to 1 week, or frozen for up to 3 months.
