Ingredients
– 2 1/4 cups all-purpose flour
– 2 teaspoons ground ginger
– 1 teaspoon baking soda
– 1/2 teaspoon ground cinnamon
– 1/4 teaspoon ground cloves
– 1/4 teaspoon salt
– 3/4 cup unsalted butter, softened
– 3/4 cup packed brown sugar
– 1 large egg
– 1/4 cup molasses
Instructions
1. – In a medium bowl, whisk together the flour, ginger, baking soda, cinnamon, cloves, and salt.
2. – In a large bowl, beat the butter and brown sugar until light and fluffy, about 2-3 minutes.
3. – Beat in the egg and molasses until combined.
4. – Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
5. – Divide the dough in half, shape each half into a disk, wrap in plastic, and refrigerate for at least 2 hours.
6. – Preheat the oven to 350°F. Line baking sheets with parchment paper.
7. – Working with one portion of dough at a time, roll out the dough to 1/4-inch thickness on a lightly floured surface.
8. – Use cookie cutters to cut out shapes and place them 1 inch apart on the prepared baking sheets.
9. – Bake for 8-10 minutes, until the edges are lightly browned.
10. – Allow the cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
Notes
For a festive touch, decorate the cooled cookies with royal icing and sprinkle with colorful sanding sugar or sprinkles. Store the cookies in an airtight container for up to 1 week.
