Ingredients
– 2 lb pork tenderloin
– 1 cup breadcrumbs
– 1/2 cup chopped fresh parsley
– 2 cloves garlic, minced
– 1 tsp dried thyme
– 1 tsp dried rosemary
– 1/2 tsp salt
– 1/4 tsp black pepper
– 2 tbsp olive oil
Instructions
1. 1. Preheat oven to 400°F.
2. 2. In a medium bowl, mix together the breadcrumbs, parsley, garlic, thyme, rosemary, salt, and pepper.
3. 3. Butterfly the pork tenderloin by slicing it lengthwise, stopping about 1 inch from the other side. Open the tenderloin like a book.
