Ingredients
– 1 lb ground beef
– 1 onion, diced
– 3 cloves garlic, minced
– 1 head green cabbage, chopped
– 1 (28 oz) can diced tomatoes
– 4 cups beef broth
– 1 cup uncooked white rice
– 2 tsp dried oregano
– 1 tsp dried basil
– Salt and pepper to taste
Instructions
1. – In a large pot or Dutch oven, cook the ground beef over medium-high heat until browned and crumbled, 5-7 minutes. Drain excess fat.
2. – Add the onion and garlic to the pot and sauté for 2-3 minutes until fragrant.
3. – Add the chopped cabbage, diced tomatoes, beef broth, rice, oregano, and basil. Season with salt and pepper to taste.
4. – Bring the soup to a boil, then reduce heat and simmer for 20-25 minutes, or until the rice is tender.
5. – Serve hot, garnished with additional fresh parsley or Parmesan cheese, if desired.
Notes
– For a thicker soup, you can add a roux or cornstarch slurry towards the end of cooking.
