Ingredients
– 2 lbs Russet potatoes, peeled and diced
– 1 onion, diced
– 3 cloves garlic, minced
– 4 cups chicken or vegetable broth
– 1 cup heavy cream
– 2 tsp salt
– 1 tsp black pepper
– 2 cups shredded hashbrowns
– 2 tbsp butter
– 2 tbsp chopped fresh chives
Instructions
1. – In a large pot, sauté the onion and garlic in a bit of oil over medium heat until softened, about 5 minutes.
2. – Add the diced potatoes and broth, and bring to a boil. Reduce heat and simmer for 15-20 minutes, until the potatoes are tender.
3. – Using an immersion blender, purée the soup until smooth and creamy. Stir in the heavy cream, salt, and pepper.
4. – In a separate skillet, melt the butter over medium-high heat. Add the shredded hashbrowns and cook, stirring occasionally, until golden brown and crispy, about 8-10 minutes.
5. – Ladle the potato soup into bowls and top with the crispy hashbrowns and chopped chives.
Notes
For a thicker soup, use less broth or let it simmer a bit longer. Feel free to add cooked bacon or shredded cheese as toppings.
