Ingredients

– 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces

– 1 tablespoon olive oil

– 1 onion, diced

– 3 cloves garlic, minced

– 1 inch fresh ginger, grated

– 1 teaspoon ground cumin

– 1 teaspoon ground coriander

– 1/2 teaspoon ground turmeric

– 1/4 teaspoon cayenne pepper (optional)

– 1 (13.5 oz) can full-fat coconut milk

– 2 cups chicken broth

– 1 cup long-grain white rice

– 1 teaspoon salt

– 1/4 cup chopped fresh cilantro

– Lime wedges, for serving


Instructions

1. In a large pot or Dutch oven, heat the olive oil over medium-high heat.

2. Add the chicken and cook, stirring occasionally, until lightly browned, about 5 minutes.

3. Add the onion, garlic, and ginger, and cook for 2-3 minutes, until fragrant.

4. Stir in the cumin, coriander, turmeric, and cayenne (if using). Cook for 1 minute.

5. Pour in the coconut milk and chicken broth, and bring the mixture to a boil.

6. Add the rice and salt, and stir to combine. Reduce the heat to low, cover, and simmer for 20 minutes, or until the rice is tender and the liquid is mostly absorbed.

7. Remove from heat and let sit, covered, for 5 minutes.

8. Fluff the rice with a fork and stir in the chopped cilantro.

9. Serve the Coconut Chicken Brothy Rice warm, with lime wedges on the side.

Notes

– For a creamier consistency, you can add an extra splash of coconut milk or broth at the end.

– Adjust the spice level by adding more or less cayenne pepper.

– Garnish with toasted coconut flakes or chopped green onions for extra flavor and texture.
