Ingredients
– 2 cups all-purpose flour
– 1 cup unsalted butter, softened
– 3/4 cup granulated sugar
– 2 tablespoons instant coffee or espresso powder
– 1 teaspoon vanilla extract
– 1/4 teaspoon salt
Instructions
1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. In a medium bowl, cream together the softened butter and sugar until light and fluffy, about 2-3 minutes.
3. Add the instant coffee or espresso powder and vanilla extract, and mix until well combined.
4. Gradually add the all-purpose flour and salt, mixing just until a dough forms.
5. Scoop the dough by the tablespoonful and roll into balls. Place the balls of dough about 2 inches apart on the prepared baking sheet.
6. Bake the cookies for 12-15 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

For a more pronounced coffee flavor, increase the amount of instant coffee or espresso powder to 3 tablespoons. These cookies can be stored in an airtight container at room temperature for up to 1 week.
