Ingredients
– 4 large eggs
– 1 cup full-fat cottage cheese
– 1/4 cup granulated sugar
– 1 teaspoon baking powder
– 1/4 teaspoon salt
– 1 cup fresh or frozen blueberries
Instructions
1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. In a large bowl, beat the eggs until light and frothy, about 2-3 minutes.
3. Add the cottage cheese, sugar, baking powder, and salt, and mix until well combined.
4. Gently fold in the blueberries.
5. Scoop the batter onto the prepared baking sheet, forming 12 equal-sized mounds.
6. Bake for 12-15 minutes, or until the cloud breads are lightly golden and set.
7. Allow to cool for 5 minutes before serving.
