– 4 large eggs
– 1 cup full-fat cottage cheese
– 1/4 teaspoon baking powder
Instructions
1. 1. Preheat your oven to 325°F (165°C).
2. 2. Separate the egg whites and yolks into two separate bowls.
3. 3. In the bowl with the egg whites, use a hand mixer or stand mixer to whip the whites until they form stiff peaks.
4. 4. In the bowl with the egg yolks, add the cottage cheese and baking powder. Mix until well combined.
5. 5. Gently fold the whipped egg whites into the cottage cheese mixture, being careful not to deflate the whites.
6. 6. Scoop the batter onto a parchment-lined baking sheet, forming 6-8 equal-sized mounds.
