Ingredients
– 1 cup low-fat cottage cheese
– 4 whole wheat tortillas
– 1 cup sliced cucumber
– 1/2 cup diced bell pepper
– 1/4 cup shredded carrot
– 2 tablespoons chopped fresh herbs (such as parsley, dill, or chives)
– 1 tablespoon lemon juice
– Salt and pepper to taste
Instructions
1. 1. In a medium bowl, mix together the cottage cheese, lemon juice, and a pinch of salt and pepper.
2. 2. Lay the tortillas on a flat surface. Spread the cottage cheese mixture evenly onto each tortilla, leaving a 1-inch border.
3. 3. Top the cottage cheese with the sliced cucumber, diced bell pepper, and shredded carrot.
