Ingredients

– 3 tablespoons unsalted butter

– 1 large onion, diced

– 8 cloves garlic, minced

– 2 sprigs fresh thyme

– 4 cups vegetable or chicken broth

– 1 cup heavy cream

– Salt and freshly ground black pepper, to taste

– Crusty bread, for serving


Instructions

1. 1. In a large pot, melt the butter over medium heat.

2. 2. Add the diced onion and minced garlic. Cook, stirring occasionally, until the onion is softened and the garlic is fragrant, about 5 minutes.

3. 3. Add the fresh thyme sprigs and the broth. Bring the mixture to a simmer and let it cook for 10 minutes.

4. 4. Remove the thyme sprigs. Carefully transfer the soup to a blender and blend until smooth and creamy.
