Description

Dive into a bowl of this savory and satisfying Cowboy Soup! Loaded with tender beef, hearty vegetables, and bold seasonings, it’s a comforting classic perfect for chilly days.

Ingredients

– 1 lb beef chuck, cubed

– 1 onion, diced

– 3 carrots, sliced

– 2 celery stalks, chopped

– 2 cloves garlic, minced

– 1 (14.5 oz) can diced tomatoes

– 4 cups beef broth

– 1 tsp chili powder

– 1 tsp cumin

– 1 tsp dried oregano

– Salt and pepper to taste

Instructions

1. – In a large pot or Dutch oven, brown the beef over medium-high heat until no longer pink, 5-7 minutes. Drain excess fat.

2. – Add the onion, carrots, celery, and garlic to the pot. Sauté for 5 minutes until vegetables are softened.

3. – Stir in the diced tomatoes, beef broth, chili powder, cumin, and oregano. Season with salt and pepper to taste.

4. – Bring the soup to a boil, then reduce heat and let it simmer for 20-25 minutes, until the beef is tender and the flavors have melded.

5. – Serve hot, garnished with your favorite toppings like shredded cheese, fresh herbs, or crusty bread.

Notes

This Cowboy Soup recipe can be easily customized – try adding in extra veggies like potatoes, corn, or green beans. For a spicier kick, add more chili powder or a pinch of cayenne pepper.
