Ingredients

– 1 lb lump crab meat

– 2 cups heavy cream

– 2 cups chicken or vegetable broth

– 1 onion, diced

– 2 celery stalks, diced

– 2 cloves garlic, minced

– 2 tbsp butter

– 2 tbsp all-purpose flour

– 1 tsp paprika

– 1/2 tsp cayenne pepper

– Salt and pepper to taste

– Fresh parsley for garnish


Instructions

1. 1. In a large saucepan, melt the butter over medium heat.

2. 2. Add the diced onion and celery, and sauté for 5-7 minutes until softened.

3. 3. Stir in the minced garlic and cook for an additional minute.

4. 4. Sprinkle the flour over the vegetables and stir to coat. Cook for 2-3 minutes.

5. 5. Gradually whisk in the chicken or vegetable broth, stirring constantly to prevent lumps.

6. 6. Stir in the heavy cream, paprika, cayenne pepper, salt, and pepper. Bring the mixture to a simmer and cook for 10-15 minutes, stirring occasionally, until the soup thickens.

7. 7. Gently fold in the lump crab meat and heat through, about 5 minutes.
