Ingredients
– 2 boneless, skinless chicken breasts
– 1 onion, diced
– 2 carrots, peeled and sliced
– 2 celery stalks, sliced
– 4 cups chicken broth
– 1 cup heavy cream
– 2 teaspoons dried thyme
– 1 teaspoon garlic powder
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 8 ounces egg noodles
Instructions
1. In a large pot or Dutch oven, bring the chicken broth to a boil over high heat.
2. Add the chicken breasts and reduce the heat to medium-low. Simmer for 15-20 minutes, or until the chicken is cooked through.
3. Remove the chicken from the pot and shred it using two forks.
4. In the same pot, sauté the onion, carrots, and celery for 5-7 minutes, until softened.
5. Stir in the heavy cream, thyme, garlic powder, salt, and pepper. Bring the mixture to a simmer.
6. Add the shredded chicken and egg noodles to the pot. Cook for an additional 5-7 minutes, or until the noodles are tender.

Notes
This soup can be made ahead of time and reheated when ready to serve. For a thicker consistency, you can add an extra 1/2 cup of heavy cream. Garnish with fresh parsley or chives for a pop of color and flavor.
