Ingredients

– 1.5 pounds chicken breasts, pounded to an even thickness

– 1 cup fresh or frozen cranberries

– 1/2 cup orange juice

– 1/4 cup honey

– 2 tablespoons balsamic vinegar

– 1 teaspoon dried thyme

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper


Instructions

1. Pat the chicken breasts dry and season both sides with salt and pepper.

2. Heat a large skillet over medium-high heat. Add the chicken and cook for 4-5 minutes per side until lightly browned.

3. In a small bowl, whisk together the orange juice, honey, balsamic vinegar, and thyme.

4. Add the cranberries and orange juice mixture to the skillet. Bring to a simmer, then reduce heat to medium-low and cook for 10-12 minutes, turning the chicken occasionally, until the chicken is cooked through and the sauce has thickened.

5. Serve the Cranberry Orange Chicken immediately, spooning the sauce over the top. Enjoy!
