Description

Juicy, tender chicken breasts cooked in a sweet-tart cranberry-orange glaze, making for a quick and easy weeknight dinner that’s bursting with flavor.


Ingredients

– 4 boneless, skinless chicken breasts

– 1 cup fresh or frozen cranberries

– 1/2 cup orange juice

– 1/4 cup brown sugar

– 2 cloves garlic, minced

– 1 tsp dried thyme

– 1/4 tsp salt

– 1/8 tsp black pepper


Instructions

1. 1. Preheat oven to 400°F.

2. 2. In a large oven-safe skillet, sear the chicken breasts over medium-high heat for 3-4 minutes per side until golden brown.

3. 3. In a small bowl, combine the cranberries, orange juice, brown sugar, garlic, thyme, salt, and pepper. Pour the cranberry mixture over the chicken.

4. 4. Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken is cooked through and the sauce has thickened.

Notes
