Ingredients

– 2 tablespoons unsalted butter

– 1 medium onion, diced

– 3 cloves garlic, minced

– 4 cups fresh broccoli florets

– 3 cups chicken or vegetable broth

– 1 cup heavy cream

– 1 teaspoon dried thyme

– 1/2 teaspoon ground black pepper

– 1/4 teaspoon salt


Instructions

1. – Melt the butter in a large saucepan over medium heat.

2. – Add the diced onion and minced garlic. Sauté for 3-4 minutes until the onion is translucent.

3. – Add the broccoli florets and chicken or vegetable broth. Bring the mixture to a boil, then reduce the heat and simmer for 10-12 minutes, or until the broccoli is tender.

4. – Carefully transfer the soup to a blender and blend until smooth and creamy.

5. – Return the blended soup to the saucepan and stir in the heavy cream, dried thyme, black pepper, and salt. Heat through, but do not boil.

6. – Serve hot, garnished with additional broccoli florets, a swirl of sour cream, or crusty bread, if desired.

Notes

For a thicker soup, you can blend a portion of the cooked broccoli and return it to the pot. You can also adjust the consistency by adding more or less broth. For a vegetarian version, use vegetable broth instead of chicken broth.
