Ingredients

– 2 tbsp olive oil

– 1 onion, diced

– 3 carrots, peeled and sliced

– 3 celery stalks, sliced

– 4 cloves garlic, minced

– 4 cups chicken broth

– 2 cups cooked, shredded chicken

– 8 oz egg noodles

– 1 cup heavy cream

– 2 tsp dried thyme

– 1 tsp dried parsley

– Salt and pepper to taste


Instructions

1. – In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery, and sauté for 5-7 minutes until softened.

2. – Add the garlic and sauté for an additional minute.

3. – Pour in the chicken broth and bring to a simmer. Add the cooked chicken, egg noodles, heavy cream, thyme, and parsley. Season with salt and pepper to taste.

4. – Reduce heat to low and let the soup simmer for 10-15 minutes, or until the noodles are tender.

Notes

For a thicker, heartier soup, you can add 1-2 tablespoons of all-purpose flour to the sautéed vegetables before adding the broth. This will help create a richer, creamier base.
