Description

Indulge in the ultimate creamy, garlic-infused salmon with sautéed spinach and earthy mushrooms. This 30-minute meal is restaurant-quality yet easy enough for any night.


Ingredients

– 4 (6-oz) salmon fillets

– 4 tbsp unsalted butter

– 4 cloves garlic, minced

– 1 cup heavy cream

– 2 cups fresh spinach, chopped

– 8 oz sliced mushrooms

– 1 tsp salt

– 1/2 tsp black pepper


Instructions

1. 1. Pat the salmon fillets dry and season with salt and pepper.

2. 2. In a large skillet over medium-high heat, melt 2 tbsp of the butter. Add the salmon and cook for 3-4 minutes per side, until just cooked through. Remove the salmon from the pan and set aside.

3. 3. In the same pan, melt the remaining 2 tbsp of butter over medium heat. Add the garlic and cook for 1 minute, until fragrant.

4. 4. Pour in the heavy cream and stir to combine. Let the sauce simmer for 2-3 minutes, until slightly thickened.

5. 5. Add the spinach and mushrooms to the pan and cook for 2-3 minutes, until the spinach is wilted and the mushrooms are tender.

6. 6. Return the salmon fillets to the pan and spoon the creamy garlic butter sauce over the top.

7. 7. Serve immediately, garnished with additional fresh spinach if desired.

Notes

For a richer sauce, use half-and-half or milk instead of heavy cream. You can also add a squeeze of lemon juice for a bright, acidic note.
