Ingredients
– 1 pound cheese tortellini
– 4 cups chicken or vegetable broth
– 1 cup heavy cream
– 1 cup shredded mozzarella cheese
– 1/2 cup grated Parmesan cheese
– 2 cloves garlic, minced
– 1 teaspoon dried basil
– 1/2 teaspoon dried oregano
– Salt and black pepper to taste
– Chopped fresh parsley for garnish
Instructions
1. In a large pot or Dutch oven, bring the broth to a simmer over medium heat.
2. Add the tortellini and cook for 5-7 minutes, or until the tortellini is tender.
3. Reduce the heat to low and stir in the heavy cream, mozzarella, and Parmesan cheeses. Simmer, stirring occasionally, until the cheese is melted and the soup is creamy, about 5 minutes.
4. Stir in the garlic, basil, oregano, salt, and pepper. Taste and adjust seasoning as needed.

Notes
This soup can be made ahead of time and reheated when ready to serve. If the soup thickens too much, simply add a splash of broth to thin it out. Feel free to add in cooked chicken or sausage for extra protein.
