Ingredients
– 2 lbs Russet potatoes, peeled and diced
– 1 onion, diced
– 3 cloves garlic, minced
– 4 cups chicken or vegetable broth
– 1 cup heavy cream
– 2 tbsp butter
– 1 tsp salt
– 1/2 tsp black pepper
– 2 tbsp chopped fresh chives (plus more for garnish)
Instructions
1. – In a large pot, melt the butter over medium heat. Add the diced onion and sauté for 5-7 minutes until translucent.
2. – Add the minced garlic and cook for an additional 1 minute, stirring constantly.
3. – Pour in the broth and add the diced potatoes. Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are very soft.
4. – Using an immersion blender (or carefully transfer to a regular blender), blend the soup until smooth and creamy.
5. – Stir in the heavy cream, salt, pepper, and chopped chives. Taste and adjust seasoning as needed.
6. – Serve the Creamy Potato Soup hot, garnished with additional chopped chives.
Notes
For a thicker consistency, you can mash some of the potatoes with a potato masher or fork. This soup also freezes well for up to 3 months.
