Description
Crispy Chicken Taquitos are a flavorful and irresistible Mexican-inspired finger food. Filled with tender, shredded chicken and melted cheese, then fried or baked to crispy perfection, these taquitos make the perfect appetizer or snack.
Ingredients
– 2 cups shredded cooked chicken
– 1 cup shredded cheddar cheese
– 1/2 cup diced onion
– 2 cloves garlic, minced
– 1 teaspoon ground cumin
– 1 teaspoon chili powder
– 1/2 teaspoon salt
– 12 small corn or flour tortillas
– Vegetable oil for frying (or cooking spray for baking)
Instructions
1. In a medium bowl, mix together the shredded chicken, cheddar cheese, onion, garlic, cumin, chili powder, and salt until well combined.
2. Place a tortilla on a flat surface and spoon 2-3 tablespoons of the chicken mixture onto the lower third of the tortilla.
3. Tightly roll up the tortilla, starting from the filled end and rolling towards the empty end.
4. Heat 1/2 inch of vegetable oil in a large skillet over medium-high heat.
5. Carefully add the rolled taquitos to the hot oil and fry for 2-3 minutes per side, or until golden brown and crispy.
6. Drain the fried taquitos on a paper towel-lined plate.
7. Alternatively, you can bake the taquitos at 400°F for 15-20 minutes, flipping halfway, until crispy.
8. Serve the Crispy Chicken Taquitos warm, with your favorite dipping sauces or toppings.
Notes
For a spicier kick, add diced jalapeños or hot sauce to the chicken mixture. You can also experiment with different cheese varieties or add black beans or corn to the filling.
