Ingredients
– 1 lb carrots, peeled and halved lengthwise

Instructions
1. – Preheat oven to 400°F (200°C).
2. – In a large baking sheet, toss the carrot halves with olive oil, garlic, thyme, salt, and pepper until well coated.
3. – Roast for 20 minutes, then remove from oven and use a fork to gently smash each carrot half, flattening them slightly.
4. – Return the smashed carrots to the oven and continue roasting for an additional 10-15 minutes, or until the edges are crispy and golden-brown.
5. – Serve the crispy smashed carrots immediately, garnished with additional fresh thyme if desired.
