Ingredients
– 1.5 lbs boneless, skinless chicken breasts
– 4 cups chicken broth
– 8 oz cream cheese, softened
– 1 cup grated parmesan cheese
– 2 cloves garlic, minced
– 1 tsp dried Italian seasoning
– 1/2 tsp salt
– 1/4 tsp black pepper
Instructions
1. 1. Place the chicken breasts in the slow cooker.
2. 2. Pour the chicken broth over the chicken.
3. 3. Cover and cook on low for 6-8 hours, or until the chicken is cooked through and tender.
4. 4. Remove the chicken from the slow cooker and shred it using two forks.
5. 5. Add the shredded chicken back to the slow cooker.
6. 6. Stir in the softened cream cheese, parmesan cheese, garlic, Italian seasoning, salt, and pepper until well combined.

Notes
For a thicker soup, you can let it simmer uncovered for 10-15 minutes after the final step. You can also add in diced tomatoes or spinach for extra flavor and nutrition.
