Description

Ingredients

– 1 pound boneless, skinless chicken breasts, cubed

– 4 cups chicken broth

– 1 (13.5 oz) can coconut milk

– 2 tablespoons fish sauce

– 2 tablespoons lime juice

– 2 tablespoons grated fresh ginger

– 2 stalks lemongrass, bruised

– 2 cloves garlic, minced

– 1 teaspoon red curry paste

– 1/4 cup chopped fresh cilantro

– 2 green onions, thinly sliced

– Salt and pepper to taste


Instructions

1. Add the chicken, chicken broth, coconut milk, fish sauce, lime juice, ginger, lemongrass, garlic, and curry paste to a slow cooker. Stir to combine.

2. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through.

3. Remove the lemongrass stalks. Stir in the chopped cilantro and green onions.

4. Season with salt and pepper to taste.

5. Serve hot, garnished with additional cilantro and green onions if desired.

Notes

For extra flavor, you can also add sliced mushrooms, baby corn, or snow peas to the soup. Adjust the amount of red curry paste to your desired spice level.
