Ingredients
– 1 lb ground beef
– 1 onion, diced
– 2 bell peppers, diced
– 2 cans diced tomatoes
– 2 cans kidney beans, drained and rinsed
– 2 tbsp chili powder
– 1 tsp cumin
– 1 tsp garlic powder
– 1 tsp oregano
– 1/2 tsp salt
– 1/4 tsp black pepper
Instructions
1. – In a large skillet, brown the ground beef over medium-high heat until cooked through, 5-7 minutes. Drain excess fat.
2. – Transfer the browned beef to a crockpot. Add the diced onions, bell peppers, diced tomatoes, kidney beans, and all the spices. Stir to combine.
3. – Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the flavors have melded and the chili has thickened.
4. – Serve hot, topped with your favorite garnishes like shredded cheese, diced onions, sour cream, or crushed tortilla chips.
Notes
For a spicier chili, add a diced jalapeño or use hot chili powder. You can also customize the beans, using a combination of kidney, pinto, or black beans. Leftovers reheat well and can be frozen for future meals.
