Description
Slow-cooked pot roast simmered in a smoky-sweet chipotle pineapple sauce, creating a comforting and flavor-packed meal. Serve this dish over rice or mashed potatoes for a hearty and satisfying family dinner.
Ingredients
– 3-4 lb beef chuck roast
– 1 onion, diced
– 4 cloves garlic, minced
– 2 chipotle peppers in adobo sauce, minced
– 1 (20 oz) can crushed pineapple
– 2 cups beef broth
– 2 tbsp brown sugar
– 1 tsp cumin
– 1 tsp oregano
– Salt and pepper to taste
Instructions
1. 1. Season the beef roast all over with salt and pepper.
2. 2. In a large skillet, sear the roast on all sides until browned, about 2-3 minutes per side.
3. 3. Transfer the seared roast to a crockpot.
4. 4. In the same skillet, sauté the onions and garlic until softened, about 5 minutes.
5. 5. Add the chipotle peppers, crushed pineapple, beef broth, brown sugar, cumin, and oregano. Stir to combine.
6. 6. Pour the sauce over the roast in the crockpot.
7. 7. Cook on low for 6-8 hours, until the meat is very tender and shreds easily.
8. 8. Remove the roast from the crockpot and shred the meat using two forks.
9. 9. Return the shredded meat to the crockpot and stir to coat in the sauce.

Notes
This dish can be made ahead and reheated for easy weeknight meals. The chipotle peppers can be adjusted to control the level of heat. For a thicker sauce, you can remove some of the liquid and whisk in a little cornstarch at the end.
