Description

Ingredients

– 3 lbs Yukon Gold potatoes, peeled and diced

– 1 onion, diced

– 3 cloves garlic, minced

– 4 cups chicken or vegetable broth

– 2 cups heavy cream

– 1 tsp dried thyme

– 1 tsp dried parsley

– Salt and pepper to taste

– Shredded cheddar cheese, crumbled bacon, and chopped green onions for serving


Instructions

1. – Add the diced potatoes, onion, and garlic to a slow cooker.

2. – Pour in the broth and stir to combine.

3. – Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are very tender.

4. – Use a potato masher or immersion blender to lightly mash some of the potatoes, leaving some chunks for texture.

5. – Stir in the heavy cream, thyme, parsley, salt, and pepper.

6. – Ladle the soup into bowls and top with shredded cheddar cheese, crumbled bacon, and chopped green onions.

Notes

– For a thicker soup, mash more of the potatoes or let the soup simmer uncovered for 15-20 minutes to allow it to thicken.

– Try adding diced ham, sautéed mushrooms, or extra herbs for variation.

– This soup can be stored in the refrigerator for up to 5 days or frozen for up to 3 months.
