Ingredients
– 1 lb ground beef
– 1 onion, diced
– 1 bell pepper, diced
– 3 cloves garlic, minced
– 1 (15 oz) can black beans, drained and rinsed
– 1 (15 oz) can pinto beans, drained and rinsed
– 1 (15 oz) can corn, drained
– 1 (15 oz) can diced tomatoes
– 2 cups chicken broth
– 1 packet taco seasoning
– Salt and pepper to taste
Instructions
1. – In a large skillet, cook the ground beef over medium-high heat until browned and crumbled. Drain excess fat.
2. – Add the onion and bell pepper to the skillet and sauté for 5 minutes until softened.
3. – Stir in the garlic and cook for 1 minute.
4. – Transfer the beef mixture to a slow cooker.
5. – Add the black beans, pinto beans, corn, diced tomatoes, chicken broth, and taco seasoning. Stir to combine.
6. – Cover and cook on low for 4-6 hours or on high for 2-3 hours.
7. – Season with salt and pepper to taste.
8. – Serve hot, garnished with your favorite taco toppings like shredded cheese, sour cream, and fresh cilantro.
Notes
– For a thicker soup, you can mash some of the beans with a potato masher.
– Add extra chicken broth or water if the soup becomes too thick.
