Ingredients
– 2 cups all-purpose flour
– 2 teaspoons baking powder
– 1/2 teaspoon salt
– 2 eggs
– 1 1/2 cups milk
– 4 tablespoons unsalted butter, melted
– 8 slices ham
– 8 slices Gruyère or Swiss cheese
– 4 eggs, fried
Instructions
1. Preheat your waffle iron.
2. In a large bowl, whisk together the flour, baking powder, and salt.
3. In a separate bowl, beat the eggs, then stir in the milk and melted butter.
4. Pour the wet ingredients into the dry ingredients and stir until just combined (do not overmix).
5. Spray the preheated waffle iron with non-stick cooking spray. Scoop the batter onto the hot waffle iron and cook until golden brown, about 5 minutes.
6. Remove the waffles from the iron and top each one with a slice of ham and a slice of cheese.
7. Place the waffles back in the waffle iron and cook for an additional 2-3 minutes, or until the cheese is melted.
8. Top each Croque Madame waffle with a fried egg.
9. Serve hot and enjoy!
Notes
For a creamier waffle, you can substitute half-and-half or heavy cream for some of the milk. You can also experiment with different cheese varieties, such as cheddar or Emmental.
