Ingredients
– 1 pound boneless, skinless chicken breasts, cubed
– 2 cups long-grain white rice
– 1 red bell pepper, diced
– 1 green bell pepper, diced
– 1 onion, diced
– 3 cloves garlic, minced
– 1 tablespoon olive oil
– 1 teaspoon cumin
– 1 teaspoon paprika
– 1 teaspoon dried oregano
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 1 cup shredded cheddar cheese
Instructions
1. Preheat oven to 375°F (190°C).
2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell peppers and sauté until softened, about 5-7 minutes.
3. Add the minced garlic and continue to sauté for 1 minute, until fragrant.
4. Add the cubed chicken, cumin, paprika, oregano, salt, and black pepper. Stir to coat the chicken with the spices and cook for 5-7 minutes, until the chicken is lightly browned.
5. Stir in the rice and 2 cups of water. Bring the mixture to a boil, then reduce the heat, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
6. Transfer the chicken and rice mixture to a 9×13 inch baking dish. Top with the shredded cheddar cheese.
7. Bake for 20-25 minutes, or until the cheese is melted and bubbly.
8. Serve hot, garnished with fresh cilantro if desired.
Notes
For a spicier version, add a diced jalapeño or serrano pepper along with the bell peppers. You can also use a blend of shredded cheese, such as Monterey Jack and cheddar.
