Ingredients
– 8 slices soft white bread
– 1 cucumber, thinly sliced
– 1 cup watercress leaves
– 4 ounces cream cheese, softened
– 1 tablespoon lemon juice
– 1/4 teaspoon salt
Instructions
1. 1. In a small bowl, mix the cream cheese, lemon juice, and salt until well combined.
2. 2. Spread the cream cheese mixture evenly on one side of each slice of bread.
3. 3. Layer the cucumber slices and watercress leaves on top of the cream cheese on 4 of the bread slices.
4. 4. Top with the remaining 4 bread slices to create sandwiches.
5. 5. Use a sharp knife to trim the crusts and cut each sandwich into 4 triangles.
Notes
For best results, use the freshest, crispest cucumbers and watercress. You can also try adding a light sprinkle of black pepper or a pinch of dill for extra flavor. Store any leftover tea sandwiches in an airtight container in the refrigerator for up to 2 days.
