– 1 cup yellow lentils (toor dal), rinsed

– 1 teaspoon salt

– 1 onion, diced

– 3 cloves garlic, minced

– 1 inch ginger, grated

– 1 teaspoon coriander powder

– 1 teaspoon garam masala

– 1/2 teaspoon red chili powder

– 4 cups fresh spinach, chopped

– 2 tablespoons chopped cilantro


Instructions

1. In a saucepan, combine the lentils and water. Bring to a boil, then reduce heat and simmer for 15-20 minutes, until the lentils are tender.

2. Heat oil in a skillet over medium heat. Add the cumin seeds and let them sizzle for a few seconds.

3. Add the diced onion and sauté for 2-3 minutes until translucent.

4. Stir in the minced garlic and grated ginger. Cook for 1 minute, until fragrant.

5. Add the coriander powder, garam masala, and red chili powder. Sauté for 30 seconds to toast the spices.

6. Add the chopped spinach and stir until it wilts down, about 2-3 minutes.

7. Pour the cooked lentils into the spinach mixture. Stir to combine and let the flavors meld for 2-3 minutes.

8. Season with salt to taste.

9. Garnish with chopped cilantro and serve hot with basmati rice or naan bread.

Notes

– For a creamier texture, you can blend a portion of the cooked lentils before adding them back to the spinach mixture.
