– 3 lbs ground venison

– 1 lb pork fat

– 2 tbsp salt

– 2 tsp black pepper

– 1/2 tsp crushed red pepper flakes (optional)


Instructions

1. – In a large bowl, combine the ground venison and pork fat. Mix well.

2. – Add the salt, black pepper, garlic powder, onion powder, smoked paprika, dried thyme, and red pepper flakes (if using). Mix until the seasonings are evenly distributed.

3. – Form the seasoned meat mixture into logs or patties, depending on your desired shape.
