Ingredients
– 1 lb ground chicken
– 1 onion, diced
– 3 cloves garlic, minced
– 1 tsp dried oregano
– 1 tsp ground cumin
– 1/2 tsp salt
– 1/4 tsp black pepper
– 2 cups cooked rice
– 1 cup cherry tomatoes, halved
– 1 cucumber, diced
– 1/2 cup pitted kalamata olives, sliced
– 1/2 cup crumbled feta cheese
– 1 cup plain Greek yogurt
– 1 tbsp lemon juice
– 2 tbsp chopped fresh dill
Instructions
1. – In a large skillet, cook the ground chicken over medium-high heat, breaking it up with a spatula, until browned and cooked through, about 8-10 minutes.
2. – Add the diced onion and minced garlic to the skillet and cook for 2-3 minutes, until the onion is translucent.
3. – Stir in the dried oregano, cumin, salt, and pepper. Cook for 1 minute to toast the spices.
4. – Remove the skillet from heat and stir in the cooked rice, cherry tomatoes, diced cucumber, sliced olives, and crumbled feta.
5. – In a small bowl, mix together the Greek yogurt, lemon juice, and chopped dill to make the tzatziki sauce.
