Ingredients

– 3 cups all-purpose flour

– 1 teaspoon salt

– 1 teaspoon active dry yeast

– 1 1/4 cups warm water

– 1/4 cup chopped fresh dill

– 1 cup chopped dill pickles

– 2 tablespoons olive oil, plus more for drizzling


Instructions

1. In a large bowl, combine the flour, salt, and yeast. Stir to mix.

2. Add the warm water and stir until a shaggy dough forms.

3. Turn the dough out onto a lightly floured surface and knead for about 5 minutes, until smooth and elastic.

4. Place the dough in a lightly greased bowl, cover with a damp towel, and let rise for 1 hour or until doubled in size.

5. Punch down the dough to release air bubbles. Fold in the chopped dill and pickles.

6. Transfer the dough to a greased baking sheet and use your fingers to spread it out into a rectangle, about 1/2-inch thick.

7. Drizzle the top with olive oil and let rise for an additional 30 minutes.

8. Preheat the oven to 425°F.

9. Bake the focaccia for 18-22 minutes, until the top is golden brown.
