Description

Dump And Bake Chicken Tzatziki Rice is a quick and easy one-pan meal that’s perfect for busy weeknights. Tender chicken, fluffy rice, and a creamy tzatziki sauce come together in this flavorful, Greek-inspired dish.

Ingredients

– 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces

– 1 cup uncooked long-grain white rice

– 1 cup plain Greek yogurt

– 1 cucumber, peeled, seeded, and grated

– 2 cloves garlic, minced

– 1 teaspoon dried dill

– 1/2 teaspoon dried oregano

– 1/4 teaspoon salt

– 1/4 teaspoon black pepper

– 1 1/2 cups chicken broth

Instructions

1. Preheat the oven to 375°F.

2. In a large baking dish, combine the chicken, rice, yogurt, cucumber, garlic, dill, oregano, salt, and pepper. Stir to combine.

3. Pour the chicken broth over the mixture and stir again to distribute the ingredients evenly.

4. Cover the baking dish with foil and bake for 30-35 minutes, or until the chicken is cooked through and the rice is tender.

5. Remove the foil and fluff the rice with a fork. Serve hot, garnished with additional fresh dill if desired.

Notes

This dish can be easily customized with your favorite herbs and spices. For a creamier texture, you can stir in a few tablespoons of cream cheese or sour cream before serving.
