Ingredients

– 2 tablespoons olive oil

– 1 onion, diced

– 3 carrots, sliced

– 3 celery stalks, sliced

– 3 cloves garlic, minced

– 6 cups chicken broth

– 2 cups shredded cooked chicken

– 8 ounces egg noodles

– 2 bay leaves

– 1 teaspoon dried thyme

– Salt and pepper to taste

– Chopped fresh parsley for garnish


Instructions

1. 1. In a large pot or Dutch oven, heat the olive oil over medium heat.

2. 2. Add the onion, carrots, and celery. Cook for 5-7 minutes until softened.

3. 3. Stir in the garlic and cook for 1 minute until fragrant.

4. 4. Pour in the chicken broth and add the shredded chicken, egg noodles, bay leaves, and thyme.

5. 5. Bring the soup to a boil, then reduce heat and simmer for 15-20 minutes, until the noodles are tender.
