Description

Crisp, tangy, and refreshing, this Korean Pickled Radish (aka Pickled Daikon Radish) makes for a delightful appetizer or side dish. The quick pickling process brings out the natural sweetness of the radish, creating a perfectly balanced flavor profile.


Ingredients

– 1 pound daikon radish, peeled and sliced into 1/4-inch thick rounds

– 1 cup rice vinegar

– 1/4 cup granulated sugar

– 1 teaspoon salt

– 1 teaspoon sesame seeds (optional)

– 1 green onion, thinly sliced (optional)


Instructions

1. In a large bowl, combine the sliced daikon radish, rice vinegar, sugar, and salt. Stir to mix well.

2. Cover the bowl and refrigerate for at least 30 minutes, or up to 24 hours, stirring occasionally.

3. When ready to serve, drain any excess liquid from the radish. Sprinkle with sesame seeds and sliced green onions, if desired.
