Ingredients

– 2 shots freshly brewed espresso

– 1 cup tonic water, chilled

– 2 tablespoons yuzu juice

– 2 tablespoons white sugar

– 1 egg white


Instructions

1. In a small bowl, combine the yuzu juice and sugar. Whisk vigorously until the sugar has dissolved and the mixture is frothy.

2. In a separate bowl, beat the egg white until stiff peaks form.

3. Gently fold the whipped egg white into the yuzu mixture to create a light, airy foam.

4. Fill a glass with ice. Pour the espresso over the ice, then top with the tonic water.

Notes
