Description

Ingredients

– 2 lbs beef chuck, cut into 1-inch cubes

– 2 tablespoons olive oil

– 1 onion, diced

– 3 carrots, peeled and sliced

– 3 potatoes, peeled and cubed

– 2 cups apple cider

– 2 cups beef broth

– 2 bay leaves

– 1 teaspoon dried thyme

– 1 teaspoon salt

– 1/2 teaspoon black pepper


Instructions

1. 1. In a large pot or Dutch oven, heat the olive oil over medium-high heat.

2. 2. Add the beef cubes and brown on all sides, about 5 minutes. Remove beef from the pot and set aside.

3. 3. Add the onion to the pot and sauté for 3-4 minutes until translucent.

4. 4. Add the carrots, potatoes, apple cider, beef broth, bay leaves, thyme, salt, and pepper. Bring to a boil.

5. 5. Return the seared beef to the pot, reduce heat to low, and simmer for 45-60 minutes, or until the beef and vegetables are tender.

6. 6. Mash or puree a portion of the stew to thicken the broth and create a creamy, stew-like texture.

7. 7. Serve hot, garnished with fresh thyme if desired.

Notes

This stew can be made a day ahead and reheated. It also freezes well for up to 3 months.
