Ingredients
– 2 cups all-purpose flour
– 1/2 teaspoon salt
– 1 cup unsalted butter, softened
– 1/2 cup granulated sugar
– 1 egg
– 1 teaspoon vanilla extract
– 1 cup finely chopped fresh figs
– 1/4 cup honey
Instructions
1. In a medium bowl, whisk together the flour and salt.
2. In a large bowl, beat the butter and sugar until light and fluffy. Beat in the egg and vanilla.
3. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. Divide the dough in half, shape into discs, wrap in plastic, and refrigerate for at least 1 hour.
4. Preheat the oven to 375°F (190°C). Line two baking sheets with parchment paper.
5. On a lightly floured surface, roll out one dough disc to a 1/4-inch thickness. Cut into 2-inch wide strips.
6. In a small bowl, mix the chopped figs and honey. Place a heaping teaspoon of the fig mixture along the center of each strip.
7. Fold the dough over the filling, then roll and pinch the seams to seal. Place the rolls seam-side down on the prepared baking sheets, spacing them about 2 inches apart.
8. Bake for 18-20 minutes, or until the cookies are golden brown. Allow to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
Notes
For best results, use fresh, ripe figs. You can also try substituting other dried fruits, such as dates or apricots, for the fig filling. The dough can be made ahead and refrigerated for up to 3 days.
