Ingredients
– 2 pounds English cucumbers, sliced into 1/2-inch thick rounds
– 2 red Thai chili peppers, thinly sliced
– 2 tablespoons toasted sesame seeds
– 2 cloves garlic, minced
– 2 tablespoons rice vinegar
– 1 tablespoon toasted sesame oil
– 1 tablespoon honey
– 1/4 cup chopped fresh cilantro
– 1/4 cup chopped fresh mint
– 1/2 teaspoon salt
Instructions
– Place the cucumber slices in a large bowl and use a potato masher or the back of a spoon to gently smash them, creating a rough, uneven texture.
– In a small bowl, whisk together the rice vinegar, sesame oil, honey, and salt.
– Add the sliced chili peppers, minced garlic, toasted sesame seeds, chopped cilantro, and chopped mint to the smashed cucumbers.
– Pour the dressing over the salad and toss gently to coat.
– Serve immediately, garnished with additional sesame seeds and fresh herbs if desired.
Notes
