Ingredients
– 1 sheet puff pastry, thawed
– 2 tablespoons olive oil
– 3 large onions, thinly sliced
– 8 ounces mushrooms, sliced
– 2 cloves garlic, minced
– 1 teaspoon dried thyme
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1 cup shredded Gruyere cheese
Instructions
1. 1. Preheat oven to 400°F.
2. 2. In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until caramelized, about 20-25 minutes.
3. 3. Add the sliced mushrooms, garlic, thyme, salt, and pepper. Cook for an additional 5-7 minutes, until the mushrooms are tender.
4. 4. Roll out the puff pastry on a lightly floured surface and transfer it to a 9-inch pie dish or tart pan.

Notes
For a richer flavor, use a mix of onions, such as red and yellow. You can also add a splash of sherry or balsamic vinegar to the onions while caramelizing. Serve the tart warm or at room temperature.
