Ingredients

– 4 boneless, skinless chicken breasts

– 2 tablespoons olive oil

– 2 large onions, thinly sliced

– 2 cloves garlic, minced

– 1 cup beef broth

– 1 teaspoon dried thyme

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper

– 1 cup shredded mozzarella cheese


Instructions

1. 1. Preheat your oven to 400°F (200°C).

2. 2. In a large, oven-safe skillet, heat the olive oil over medium-high heat.

3. 3. Add the chicken breasts and sear for 3-4 minutes per side, or until golden brown.

4. 4. Remove the chicken from the skillet and set aside.

5. 5. Reduce the heat to medium and add the sliced onions to the skillet. Cook for 10-12 minutes, stirring occasionally, until the onions are caramelized and softened.

6. 6. Stir in the minced garlic and cook for an additional minute.

7. 7. Pour in the beef broth and add the dried thyme, salt, and black pepper. Bring the mixture to a simmer.
